Tortang Giniling is a Pinoy classic dish. It is inexpensive and easy to prepare. Tortang giniling are best for baon for the reason that it does not have sauce and it has a longer shelf life. All that is needed is a banana ketchup dip. When I was in school the dish was a regular pack lunch in school. Tortang giniling is served also during breakfasts and of course garlic fried rice.
To make my Tortang Giniling I used ground beef and some diced potatoes. The ground beef and diced potatoes are first sautéed with garlic and onion and a little bit of soy sauce for color. The sautéed ground beef and diced potatoes are then mixed with beaten eggs and pan pried in manageable quantity or size.
Here is the recipe of my Tortang Giniling.
1/2 kilo ground beef
2 medium size potato, skinned, cut into small cubes
6 eggs, beaten
3-4 cloves garlic, peeled, crushed, chopped
1 medium size onion, peeled, chopped
1/4 cup soy sauce
salt and pepper
In a frying pan sauté the garlic and onion until fragrant. Add in the ground beef a stir cook for 2 to 3 minutes. Add in the soy sauce and stir cook for another 1 to 2 minutes. Now add in about 1 to 1 1/2 cups of water bring to a boil. Add in the potatoes and cook for 5 to 8 minute or until the liquid has evaporated. Season with salt and pepper to taste. Remove from the pan and let cool down. Clean the frying pan and keep aside. Now in a big bowl mix the cooked ground beef and beaten egg. Keep aside. Using the same frying pan heat generous amount of cooking oil until it start to smoke. Scoop out about 1/2 to 2/3 cup of the ground beef and egg mixture and fry for about 1 to 2 minutes each side or until sides are slightly seared at low to moderate heat in batches. Serve with banana or tomato ketchup.
