Pinoy Egg and Tomato Salad. I am one of the countless Pinoy who loves the egg and tomato salad. It is a salad to the non-Filipino but for most Pinoy the egg and tomato salad is served as a viand to be eaten with a lot of rice. It is full nutrients, it is delicious and of course it is a cheap Pinoy viand when times are lean.
The Pinoy Egg and Tomato Salad is a regular fare to most OFW like myself it is easy to prepare it does not require unique cooking skills. Now if you have all those boiled eggs used during the recent Easter lying in your refrigerator and have not yet decided what to do with them. Now it’s time to make some Pinoy Egg and Tomato Salad, I am pretty sure the experience will bring back some old food memories.
I know it does not need any cooking recipe to make a Pinoy Egg and Tomato Salad, but as I have always writing the recipe is for those who are learning to cook or for this case make an egg tomato salad.
Here is the recipe of my Pinoy Egg and Tomato Salad.
3 hardboiled eggs, shelled, cut into wedges
2 medium size tomatoes, coarsely chopped
1/2 medium size onion, peeled, coarsely chopped
1 green or red chili, sliced crosswise
2-3 tbsp. fish sauce
In a big bowl toss chopped tomatoes, the chopped onions, the sliced chili and fish sauce. Now add in the hard boiled egg wedges and carefully toss making sure that the egg yolks are not crumbled. Serve as a side dish or as a main dish with rice.
