Pinoy Omelet. The Pinoy omelet is one of the comport food which brings back childhood memories. It is a regular breakfast fare with fried rice that I grow up with. I am pretty sure that most Pinoy would have memories of the Pinoy Omelet. The Pinoy Omelet is made up of sautéed tomatoes and onions and mixed with beaten egg, cooked omelet as in Torta style or Scrambled. Cooking is fairly easy, most of my readers are for sure know very well how to cook our Pinoy omelet. But for the benefit of those who are learning to cook I have to post the recipe. There are no exact quantities on the ingredients. Any quantity of onions and tomatoes may be used. Remember thought that this is an omelet therefore the amount of onions and tomatoes are proportional to the quantity of egg that you have. Not of course you intend to cook it Scrambled style.

As I have mentioned above cooking is fairly simple. Here is the recipe of my Pinoy Omelet.
6 eggs, beaten
1 large tomatoe, chopped
1 medium sized onion, peeled, chopped
salt to taste
In a nonstick pan sauté the onion and tomato for 3 to 5 minutes or until wilted ant the tomatoes start to disintegrate. Season with salt to taste. Remove from the pan and keep aside. Using the same pan, clean of all the tomato and onion residue. Heat generous amount of cooking oil. Pour the beaten eggs in the pan and let it cook at low heat for 1 to 2 minutes or until the bottom of the beaten eggs start to solidify. Pour and spread out the sautéed onion and tomato on top of the egg. Making sure that the sautéed onion and tomato are submerge with the still soft beaten egg. Continue to cook at low heat for 1 to 2 minutes or until the top part of the egg start to solidify. Now fold the egg in half to form a half circle and continue to cook for about 1 minute then flip the egg and continue to cook the other side for about 1 minute. Remove from pan and serve with banana ketchup.
